There are a lot of machines in the 2K - 2.5K range, mine is $1299 RRP. Don't get me wrong if I could afford it I would have gotten the Domobar Super or ECM like yours, they are fantastic no doubt. In hindsite I would have spent more on a grinder. The Rocky is good but I can see the advantages in spending a bit more. With all that said, the skill of the person using the equipment is more important than the equipment itself...I have much to learn before reaching the limits of my coffee hardware.

My machine has been going strong now for almost 4 years Pump was the only thing that has been replaced and that was cheap enough. I dare say your machine should also last you a very long time Grinder i opted for a mini mazzer, but i think they are overpriced personally. and as you say, the barista is the most important part. You can have the best machine best grinder best beans, but without the know how your coffee's will be doomed

Still Sydney seems to be the place to shop and Melbourne the place to eat and for cafes. Its digital so nothing to lose Here's something for you to try with your second pic. notice how the background is overexposed, and some areas slightly underexposed. Its a hard situation to get right, but enter HDR If you use photoshop its built in. what you do is set the camera up on a tripod and take 3-5 pics. start from underexposing by 1 or 2 stops then work your way up to overexposing by a couple of stops. now you will have a series of pics and each will have each part of the scene exposed perfectly. Do you shoot in RAW? if not use this instead of jpg, this way if you do make a mistake its easily corrected. RAW is like having a negative, just eats more space on your memory cards
